- 1 cup Rolled Oats
- 1 cup Almond Milk
- 1 cup Greek Yogurt or Skyr thick
- 1 tablespoon Chia Seeds
- 2 tablespoon maple syrup
- 1 teaspoon vanilla extract

Chocolate Layer
- 1½ tablespoon cocoa powder divided
Coffee Layer
- 2 tablespoon strong coffee
- ½ tablespoon Cocoa powder
- 1 tablespoon Rolled Oats
Topping
- 1 cup Greek Yoghurt or Skyre thick
- 1 teaspoon vanilla extract
- 1 teaspoon cocoa powder for dusting
1. Prepare the base: In a mixing bowl, combine the oats and chia seeds.
2. Add the almond milk, yogurt, maple syrup, vanilla, and a small pinch of salt. Stir well. Let the mixture sit for 5 minutes, then stir again to prevent chia clumps.
3. Divide into two bowls: Split the oat mixture evenly between two bowls.
Coffee Layer
5. In the second bowl, add the brewed coffee, ½ tablespoon of cocoa powder, and ½ tablespoon of oats. Mix thoroughly.
6. Cover both bowls and refrigerate for at least 4 hours, or overnight, to set.
To Serve
7. In two glasses or jars, layer the chocolate oats first, followed by the coffee oats.
8. Top with thick Greek yogurt mixed with a little vanilla extract, then finish with a dusting of cocoa powder.
